Wednesday Weeknight Meal!

After a trip to Charleston my Aunt (who is a fabulous cook and can make ANYTHING) attempted and succeed in recreating a what they called a Southern Minestrone, I think. No matter what it is called, I call it "good and easy" :)



Six Ingredients:
chicken sausage, sliced
canned collards
canned black eyed peas, drained
chicken broth
red pepper flakes
onion






I sautéed the onion and slices of sausage until fully cooked then added the rest of the ingredients and simmered until I was ready to eat. Easy peasy and great for weeknight meals. Also, it tastes really good reheated.
