Meatless Monday- Warming Slimdown Soup

With fall weather right around the corner I figured this would be a great time to post this wonderful recipe.  Its a filling, low calorie, nutrient packed meal perfect for lunch or dinner. Oh and it's simple!


Ingredients:

3-4 parsnips
10 baby carrots
mushrooms
garlic cloves, minced
dash of hot sauce
rosemary
thyme
3.5 cups vegetable broth
1/2 cup water
salt and pepper
chickpeas, drained and rinsed

Now here is the really easy part slice all veggies and put all ingredients into a crock pot. Cook on low 6-8 hours or high 3-4 hours.

Perfect for those busy fall weeknights and perfect ending to a fall night.
